Erev Shabbos Baking

gingies 002… including pareve rice pudding, made with coconut milk.  2 cups cooked rice, 2 cups (1 tin) coconut milk, 1/3 c. sugar, some raisins and cinnamon.  Boil until most of the milk is gone:  creamy & delicious!

gingies 004And also pareve (why do I keep saying pareve?) gingerbread teddy bears…a little short on ginger, but otherwise delicious.  This recipe is different from any other cookie recipe I have, but it mixes up easily and rolls out amazingly well with NO STICKING.  Wow!
